Fuel
up for that 8 hour Adventure Race or recover from that
early morning cottage road run with these delicious
nutrition packed bars. Filled with heart healthy omega 3
fats, muscle building protein, energy boosting carbs,
filling fibre, and kid friendly chocolate chips. These
cookies are sure to be a family favourite cottage hit!
1 cup non-hydrogenated
margarine 250 mL
1 cup packed brown sugar 250 mL
2 eggs 2
1 tbsp vanilla 15 mL
1 ½ cups rolled oats (not instant) 375 mL
1 cup whole wheat flour 250 mL
½ tsp baking powder 2 mL
½ tsp baking soda 2 mL
¼ tsp salt 1mL
¾ cup semi sweet chocolate chips 175 mL
½ cup sunflower seeds 125 mL
½ cup ground flaxseed
125 mL
½ cup sweetened flaked coconut 125 mL
In a large
bowl, beat margarine with brown sugar until fluffy. Beat in eggs
and vanilla.
In a
separate bowl, mix together rolled oats, whole-wheat flour,
baking powder, baking soda, and salt. Add into butter mixture
along with chocolate chips, sunflower seeds, ground flaxseed and
sweetened flaked coconut until well blended.
Press dough
into a parchment paper-lined 9” x 13” cookie sheet. Bake in
centre of 375 F oven for 20 minutes or until slightly
golden. Let cool completely in pan on rack before cutting into
bars. Makes about 32 bars.
Layer
between waxed paper in airtight container and store at room
temperature for up to 5 days or freeze for up to 6 months.
